Making your own marshmallows
Marshmallows are something you find in a sweet shop or supermarket rather than at a patisserie. But this technique belongs to the pastry chef’s trade! All the more so since you already have all the ingredients in stock that you need to make your own marshmallows.
Marshmallows have always been around. And yet you don't often find them in a fine bakery or patisserie. High time to bring this discipline back into our trade. The easy basic ingredients for marshmallows are likely already in your cupboard.
Inspiration
Originally, marshmallows were made of egg whites, sugar and gelatine. Nowadays, you will find recipes that replace egg whites with inverted sugar. Dré Eversteijn and Bruno Van Vaerenbergh, the technical advisers to Debic in the Netherlands and in Belgium, took on the challenge with these ingredients and came back with several fun recipes and additional applications.
