Halloween of course means pumpkins. The orange fruits are typical for this time of year, but they also have a special connection to the season. You will see them everywhere, hollowed out with a candle inside. The pumpkin flesh is perfect for making this tasty parfait.

Ingredients

For 10 servings

Pumpkin parfait

1 l Debic Parfait

150 g pumpkin purée

50 ml maple syrup

3 g cinnamon powder

Garnish

200 g finely crushed Oreo biscuits

10 chocolate Halloween decorations

1 tray of Melissa cress

Preparation

Pumpkin parfait

Whip the parfait in the food processor until light and airy.

Meanwhile, mix the pumpkin purée with the maple syrup and cinnamon powder.

Gently fold the pumpkin mixture into the whipped parfait.

In a silicone pumpkin mold, first fill the stem with dark chocolate.

Then, fill the rest of the silicone mold with the whipped parfait.

Smooth the surface and leave to set in the freezer.

Once frozen, carefully turn the pumpkin parfait out of the mold.

Finish neatly by spraying it with orange velvet spray.

Cover and store in the freezer until ready to serve.

Assembly

Sprinkle the Oreo crumbs on the plate. 

Arrange the pumpkin parfait on it and finish the dish with the chocolate decoration and cress. 

Serve frozen or you might prefer to serve the pumpkin as a ‘semifreddo’.
