Lemon thyme panna cotta with melon salad

Ingredients

Panna cotta

Lemon thyme syrup

300 ml White port

200 ml Sugar water (1:1)

10 g Lemon thyme

Melon salad

Galia melon

Yellow watermelon

Honeydew melon

Cantaloupe

Garnish

30 x White chocolate balls

Preparation

Panna Cotta

Melt the panna cotta and add the sprigs of lemon thyme.

Leave to infuse for 30 minutes, pass through a fine sieve and pour into the desired moulds.

Lemon thyme syrup

Reduce the white port with the sugar water and lemon thyme leaves until you have a syrup.

Store in the refrigerator.

Melon salad

Use various sized melon ballers to make balls of the different types of melon.

Finishing touch

Marinate the melon in the white port in a suitable container and then put in a sous vide machine.

Cook sous vide twice so that the white port sufficiently infuses the melon.

Put the panna cotta on the plate and arrange the melon balls next to it.

Garnish the dish with the lemon thyme syrup and chocolate balls.
