Valentine's Day sharing

Two spoons please! This Valentine's Day dessert is on a shared plate. After all, sharing is what love is all about.

Ingredients

For 10 servings

Beetroot espuma

300 ml Debic Panna Cotta

100 ml raspberry puree

100 ml beetroot juice

1 gas cartridge

500 ml Debic Panna Cotta

150 g ruby chocolate

100 g clear coating jelly

100 ml beetroot juice

Ice hearts

3 l water

Red food colouring

Garnish

10 chocolate roses, Dobla

10 red fruit sorbet quenelles

100 g red crumble

100 ml red fruit coulis

Freeze-dried raspberry pieces

Fresh raspberries

Chocolate hearts, Dobla

Preparation

Beetroot espuma

Melt the Panna Cotta and mix with the other ingredients.

Transfer to a siphon and aerate with a gas cartridge.

Place in the refrigerator for at least 2 hours.

Kisses

Melt the Panna Cotta and dissolve the ruby chocolate in it.

Pour into the molds and leave in the refrigerator to set.

Freeze to remove from the molds more easily.

Heat the covering jelly together with the beetroot juice and pass the frozen lips through the jelly.

Ice hearts

Color the water with the red coloring and fill the molds.

Freeze until use.

Assembly

Place the ice hearts in the centre of a large plate and finish with the other components and decorations. 

Serve with 2 spoons.
