Vegetable cream

A technique for making a creamy smooth vegetable cream

Step-by-step

Vegetable cream step1

Put the cooked vegetables in the blender. In this example we use sous vide carrots.

Vegetable cream step2

Put the cooked vegetables and Debic Culinaire Original in the blender and add flavorings. Tip: Add the cream in two parts to keep it from getting too thin.

Vegetable cream step3

Use the blender to finely chop. Tip: Use the vegetables while they're still warm.

Vegetable cream step4

Pass the cream through a fine sieve.

Vegetable cream step5

Season further if necessary. In this technique we use mango kombucha.

Add salt and regenerate the cream in a pan
